Home-cooked recipes straight from the smoker

Whether you’re craving beef brisket, smoked turkey or a hearty slab of baby back ribs, PM BBQ is whipping up all those favorites and many more.

In fact, they have over 10 years of experience smoking up delicious meats for different sets of taste buds across the West St. Louis County area and beyond. PM BBQ started out as a booth at the Wildwood Farmers’ Market in 2008 selling pulled pork and baby back ribs.

“The market opened at 8 a.m., and we would be sold out by 9:15 a.m.,” owner Paul Lamers said. PM BBQ opened its first brick-and-mortar location the next year.

At the end of 2018, the venue opened the doors to its Ellisville location, where to this day, they’re dishing up smoked meats that are each seasoned with a specially crafted spice rub and are prepared to order. PM BBQ’s side dishes, like the Homemade Applesauce and Sweetcorn Spoonbread, all come from family recipes.

“We pride ourselves in making fresh, really good comfort food,” Paul said.

Local favorites include the Brisket Sandwich and their Crispy Ribs, a specialty unique to PM BBQ. They are made by smoking ribs for four hours and flash-frying before they’re tossed in a secret glaze. Customers can add to their meal with homemade salads, and soups, all of which are still made from scratch daily.

Visitors can also satisfy their sweet tooth with an array of made-from-scratch cakes, pies, cheesecakes and various other seasonal desserts. Each and every dessert at PM BBQ is made from scratch by Paul’s wife, Candy. The cycle of sweets includes year-round favorites like the Southern-spiced Hummingbird Cake to the Red Velvet Cake, a popular hit around Valentine’s Day.

“We’re baking something new every day,” Paul said.
